Groto de corgnan

In 1980 Chef Giorgio Soave, who had 20 years of restaurant experience working for others, finally realised his dream, converting an abandoned house into his own restaurant. He called the restaurant “Groto de Corgnan”, “Groto” a word in local dialect meaning a small stream, which crossed the street “Corgnan” where the restaurant is located, in the village of Sant’Ambrogio di Valpolicella.

Giorgio prepared traditional, regional dishes, based on high quality seasonal ingredients, which he sourced locally from his own garden in Molina, and small suppliers in the regions of Valpolicella and Lessinia. For the following 18 years, Giorgio and his wife Assunta, developed Groto into one of the best and most famous restaurants in Valpolicella. In the mid 1990s, Giorgio’s sister, Elsa, started working at Groto supporting her brother in the kitchen and in the early 2000s Giorgio’s daughters starting working in the restaurant, Martina in the dining-room and Anna in the kitchen.

Groto de Corgnan has won many awards. It has hosted a variety of famous guests (sports stars, actors, politicians). Giorgio has appeared on national TV and been included in several books and magazines. Since 1981 Groto has been listed every year in the Michelin guide.

In 1999, Judy Harman visited Groto de Corgnan as a customer and fell in love with Chef Giorgio’s traditional Italian cuisine and his daughter Martina’s friendly and skilful service. For the following 16 years, Judy and her husband Jonny remained devoted and delighted customers of Groto de Corgnan, returning to dine at Groto at least once a year. Judy had worked for an international company since 1985 and was a passionate, amateur home cook.

In 2015 Judy chose her favourite restaurant Groto de Corgnan, to celebrate Jonny’s 50th birthday. After dinner that night, Giorgio talked about his daughters deciding to take different paths in life and that being 70 years of age, it was now too challenging to run Groto by himself. Giorgio then went on to say that he’d made the very difficult decision to close the restaurant and retire.

Judy immediately responded saying to Giorgio that Groto shouldn’t close as it was far too special and important. Judy suggested that instead of closing, and if Giorgio would be willing to teach and train her, she would change her career and life and come to help him keep Groto open. Giorgio accepted her offer and in 2016 Judy and Jonny moved from Sydney, Australia to Verona.

Ristorante Groto de Corgnan remained open and Giorgio and Judy worked side-by-side in the kitchen for two years. Today Groto is growing again and Giorgio continues to share his culinary knowledge and experience with Judy and the restaurant team. He now also has time to spend with his daughters, grandchildren and tending his garden.

Judy says she feels incredibly fortunate, because she has fulfilled her dream of having a restaurant and is able to learn everyday, doing something she loves… And importantly, Groto de Corgnan will remain open and continue to delight customers for several decades more.

Our menu is a fresh and authentic itinerary of gastronomic excellences that, in respect of seasonal availability, will accompany you from the appetizer to the dessert. Bread, fresh pasta and desserts are born in our kitchen. Our restaurant has a garden with canal view in Venice and with tables in the shade of a wisteria. We love design and comfort and with the recent restoration we have chosen to maintain the original features of the interior rooms such as the warmth of exposed beams.  In 1992 Andrea worked with his father Sergio, called Cavicchi, and his mother Luigina, in a typical Venetian family bar. There is a billiard room. Max is enrolled at the university, but often he swaps that room for a library. Here they meet. In 2000 they opened their first restaurant, a brewery with a small kitchen. Today, after many different experiences in the catering field, they are still friends and partners and start over with a new project.

Restaurant Local

Inspired by the ongoing changing of the seasons, Local is a creative and natural take on the Venetian traditional cuisine. Local in Venetian means “Place where you can eat, drink and be merry”. It also express the powerful connection to Venice and the Venetian lagoon that is at the heart of our restaurant.

Our ever-changing menus capture the true essence of an incredible ecosystem which is made of water and earth. We look for the finest organic ingredients, carefully sourced from small local producers, trusted growers and fishermen, who love nature and its natural cycle only as much as we do. These exceptional ingredients are combined with simplicity, in order to enhance their flavour and characteristics.

Our concept is also translated into our wine selection. We handpick only artisanal natural wines, and along with the wines we select the fantastic women and men that produce them according to the natural seasonal cycle and respecting traditional methods. The result is a wine that is a pure expression of the terroir where it comes from.

Finally, we have used local artisans also for the interiors of our restaurant. From the floor, the tables, the chairs and the lamps, to the glasses and the wine cellar… everything is handmade by local craftsmen. You will also be able to enjoy our chefs at work in the open plan kitchen whilst they are preparing signature dishes and cicchetti.

While learning, developing and, growing, in 1996 “Ai Mercanti” moved to San Marco quartier, Nadia headed it’s kitchen and alterated the cuisine type into contemporary one. These changes were highly appreciated not only by customers, but also by the famous Michelin – in 2008 “Ai Mercanti” restaurant got it’s third fork in a “red guide”. Unfortunatelly the same year the economy faced serious challenges. But even whenthe times changed, the world continued going on and the question arose how to keep moving without loosing your face and idea? The answer was found by the son of Nadia and Diego – Simone Poli, who was inspired by the newest restaurant trend from France – bistronomie. Thus following the idea of high cuisine made of cheaper raw material Simone created gastrosteria (a blend of “gastronomy” and Italian “osteria” instead of a french “bistro”). And nowdays a dinner in Ai Mercanti with its modern cosy atmospere and seasonal creative menu can be afforded by everybody.
The wine list is concentrated on small Italian producers, which Ai Mercanti is happy to promote and present to its foreign customers. Though some famous labels are as well in the list.

Antica Birraria La Corte

Birraria La Corte is rediscovered and brought to light in Campo S. Polo,” one news reporter wrote about our restaurant as its history goes back centuries: in the 16th century it was used to house the bulls participating in the world-famous events held in Campo San Polo and St. Mark’s Square . In the 19th century, during the Austrian dominion, it was used as a beer factory and remained so even after the Mauria brothers who continued the activities until the Fascist period took over. World War II was a fatal blow to the “Birraria” which remained closed until 1998, when we decided to renovate it as an avant-garde restaurant. The restoration of the place, in respecting the structure’s originality, preferred the use of modern materials such as steel and zinc plates, perfectly combined with other more traditional materials such as wood and copper. The result is an ambience with just a hint of New York city-life which has merged by now with Venetian tradition.

Ristorante Bistrot de Venise

The “Bistrot de Venise“  takes you through an intriguing and fascinating journey through the history of Venetian cuisine and fine wine. Open since 1993, this charming place is the epitome of a uber chic and trendy restaurant, but the touches of class are equally present, making this one of those rarities where classical and contemporary come together in a most beautiful harmony.

Since the time it has thrown its doors to the public, the Bistrot the Venise has attracted various writers, poets and other well known personalities who have lent it the air of being a cultural epicentre. There’s also a sense of soothing calm; the décor is understated and elegant and the dimly lit rooms, stained glass paintings, dark wood, and cream walls with old framed photographs and posters help to create a convivial and welcoming atmosphere. The al fresco arrangement is true to its name, providing a beautiful setting in the gently unfolding dusk, perfect for a romantic and intimate dinner.

A look at the menu will surprise those who are expecting typical Italian fare, because their basic premise is to introduce the tastes of historical Venetian cuisine, going back by quite a few centuries, to the 14th onwards. Naturally, the tastes are unique and pleasing and something you will remember with delight. Consider the old fashioned pasta with saffron, lamb meat and offal sauce followed by the veal liver with onions and polenta and ending with an almond and pistachio pudding with candied lemon as an excellent example of the sampling menu.

An à la carte in this section could bring you hors d’oeuvres such as carpaccio of marinated sturgeon on artichoke; duck breast confit with mango chutney and fennel jelly or a duet of salt cod fish with chick peas. For first course, there’s homemade large ravioli filled with game and pumpkin sauce; tagliatelle with lagoon eel and aromatic herbs, or risotto with dried stock fish.

As the meal progresses, the main courses may include venison fillet with eggplant flan and sautéed vegetable pie; fish baked with potatoes, tomato, olives and caper fruits or baked veal tongue with spices and stewed savoy cabbage. End with fresh cheese and pine nut fritters with wine and cinnamon sauce; glazed beetroots, mascarpone cream and macaroons or crème brûlée with pumpkin and ginger ice cream.

As part of the venture of delving into historical food, the wines at Bistrot de Venise also mirror this fascination with the past and you can spot many a rare wine in their enoteca. Their research has been deep and accurate, helping them uncover unique gems of the wine tradition. Some of the finds include Bianchetta, Rabosi and Oseleta varieties as well as the great classics of the North East and they have over 60 wines by the glass with more than 200 highly select Italian and French labels. Regular wine tasting sessions and other events make this a well loved hub. More information can be found on their Website.
